The sunniest and hottest time of the year has already arrived – it’s summer in Vienna! Sun, nice weather and long days – is there anything better than this wonderful time of the year? I guess not.

However, the heat has also some negative aspects. As soon as the temperatures rise, a lot of people lose their appetite and even though they feel they’re hungry, they can’t force themselves to eat. Because of this, especially during this time, taking care of the nutrition is more than important. Then, there is often the other problem – no idea what to cook! One takes a snack or coffee to go, which is not exactly the healthiest option. However, it is very important to eat balanced meals and to prepare light and refreshing summer dishes instead of heavy ones.
Especially when it is really hot outside, everyone wants to enjoy the weather instead of spending the day in the kitchen. Therefore, my personal cooking tip for summer is: light and fast dishes, without long cooking time!
At home, we don’t prepare really heavy meals during the summer. Instead, we have various salads, cold plates, pasta dishes and sometimes barbecue on weekends. Then, my hubby has the honor to fire up the barbecue and to serve the delicacies – on such occasions I prepare the salad!
Now, back to my summer tip: Light dishes without long cooking time! Today I have prepared my v e r y f i r s t recipe for you! It is not only incredibly delicious, but also ready in just a few minutes. I have decided to share this recipe with you because it is one of my favorite summer recipes: Pasta with basil pesto and walnuts! Fresh, light and also a good option on the go.
Preparation time: Only 15 minutes! Doesn’t it sound great, especially when it is so hot outside and we don’t want to spend a lot of time in the kitchen? Oh yess, it sounds perfekt, if you ask me!
Ingredients for two portions:
- 300g dmBio spelt pasta
- 1 glass dmBio basil pesto
- handful of dm bio walnuts
- 3 tbsp dmBio extra-virgin olive oil
- 2 tbsp dmBio honey
- salt and peper
- fresh basil (few leaves)
- handful of cherry tomatoes




Preparation:
Bring a saucepan of water to boil. Salt and add pasta. Cook until al dente and after that put into cold water. In the meantime, take a small bowl and mix 3 tbsp olive oil, 2 tbsp honey, basil-pesto, salt and peper. Chop the walnuts and and halve the cherry tomatoes.
Drain the pasta and mix it with the sauce in a large bowl. Garnish with choped walnuts, cherry tomatoes and fresh basil.


An additional tip: You can mix pasta with baby mozzarella, grilled chicken and pine nuts. Depending on your wishes, you can add other ingredients and mix.
